Signs of Fall

Every Fall I look forward to fresh ripe peaches.
I made this peach crisp the other day and just had to share the recipe.

Peach Crisp
7 large ripe peaches, peeled and cut into chunks
1 tsp. lemon juice
2 Tbsp. flour
1/4 cup brown sugar
1 Tbsp. white sugar
1/8 tsp. cinnamon
1/2 tsp. vanilla

Mix together in a bowl and pour in an 8" x 8" glass pan.

Topping
1 1/4 cups flour
1 cup rolled oats
1/2 cup brown sugar
1/2 cup white sugar
1 cube softened butter
1/4 tsp. cinnamon

Combine all ingredients.  It will be crumbly.

Bake at 350 for 20 to 25 min. or until filling is hot and bubbly and the topping is brown and crispy.  Top with whip cream or ice cream.

Although I didn't, I could have eaten the whole pan myself.  MMMmmmm.

 Happy Fall,
Bonnie

  2. Yummmm. Fruit crisps are my favorite desserts. Our peaches are sort of past their peak so I am on to plums or apples now. Friday is my farmer's market shopping day -- guess I know what I will be making this weekend.

    Thanks for the recipe!

  5. I just found your recipe and I love peach crisp. One question, what is a "cube" of butter?
