It's a Snow Day!

One of the great things about living in Idaho is the change of seasons!  All weekend it has been snowing and blowing like crazy!
When we got up this morning all the schools around were closed for a
Snow Day...


What's better on a snow day than some hot Potato/Bacon Soup (We grow the best potatoes in Idaho) to eat after playing outside on the snowmachines and sleds!

My neighbor Danette gave me this recipe and it's one of our favorites. 

Potato/Bacon Soup
2 cans Swansons Chicken Broth - regular
1 can Swansons Chicken Broth with garlic
8 cups chopped potatoes
1 medium onion chopped
1 can cream of Chicken soup

Put in your crock pot and cook until potatoes are soft, mine cooks in about 4 hours, my neighbor says 6.

Then add 1 - 8 oz. cream cheese which has been softened in the microwave
3 oz. of Homel Real bacon bits.

Stir and continue heating until cheese is melted.

Serve with grated cheese and parsley flakes on top.
